Timmermans Oude Gueuze

Oude Gueuze is a controlled designation of origin and the name is therefore protected. The typical taste of the Timmermans Oude Gueuze is the fruit of traditional brewing techniques that were applied according to the rules of good craftsmanship. Old lambic, which has matured in wooden barrels for three years, is mixed with young lambic, which initiates spontaneous fermentation in the bottle. The brewer selects the lambic very carefully to obtain a perfect taste. After production, the Timmermans Oude Gueuze yeasts for another four months in the bottle, but during 20 years it keeps getting better.

Taste
Discovering the world of “brettanomyces”, the wild yeasts of spontaneous fermentation that are the source of the legendary Lambic of the Senne Valley, is a real experience. This little wonder gives a sour taste perception and will overwhelm you with its tasted delicacy. Lambic has nothing to do with acidity anymore because a raw and fresh aroma is combined with a completely liberating taste from the beginning, so as to leave a sense of well-being on the palate. And yet the mystery of the Brussels gueuze remains.
